Lemon Chia Pudding with Mango

Try this lemon chia pudding with mango for a fresh breakfast that'll be ready-to-go in the morning!

Serves 4

You will need:

- 1 x 400ml can coconut milk

- 1/2 cup chia seeds

- 1/2 cup lemon juice

- 3 tbsp maple syrup or honey

- diced mango, to top

To make:

  1. In a large bowl, mix together all ingredients, except the diced mango. You may need to add a little more coconut milk, or an alternative milk to reach desired consistency.

  2. Separate into 4 jars or containers and top with diced mango.

  3. Leave in the fridge to set overnight.

  4. Enjoy for breakky, a snack or even a healthy dessert!
