Honey Roasted Carrots

The best honey roasted carrots recipe! And the perfect side dish to your next Sunday lunch with the family.

You will need:

- 500g carrots, washed (you can peel them, but I like to leave the skin on for extra fibre)

- 3 tbsp extra virgin olive oil

- 3 tbsp honey

- 2 garlic cloves, crushed

- salt and pepper

- optional: parsley to garnish

To make:

  1. Preheat oven to 200°C and line an oven tray with baking paper.

  2. Mix olive oil, honey, garlic, salt and pepper together in a bowl.

  3. Toss the carrots in the honey mixture, place on the prepared tray and sprinkle with parsley.

  4. Bake for 20 minutes or until golden. Best enjoyed while hot.
