Pomegranate Salad

The perfect gut-friendly summer salad! I couldn't image a better side dish for a picnic or to take to a family barbecue than this delicious pomegranate salad.

For the salad you will need:

- 150g mixed lettuce leaves

- 1 pomegranate, seeded

- 1 avocado

- 1 cucumber, sliced

- 100g feta, cubed or crumbled

- 200g beetroot chunks (from a can, or freshly roasted)

- 1/2 red onion, sliced (swap for spring onions for a fresher flavour)

- nuts or seeds to garnish (I love sliced almonds and toasted pepitas!)

For the balsamic dressing you will need:

- 1 tbsp balsamic vinegar

- 3 tbsp extra virgin olive oil

- 1 tsp honey

- salt and pepper to taste

You might also like to add quinoa or cous cous, and some roasted pumpkin to make this a fresh, filling meal. Yum!
