One-Pan Baked Veggie Frittata

Need some dinner inspiration? Try this easy One-Pan Baked Vegetable Frittata.

You will need:

- 1 tbsp olive oil

- 10 large eggs

- 1/3 cup milk

- 1/2 tsp salt

- 1/4 tsp ground black pepper

- 1 cup spinach, chopped

- 1 cup cherry tomatoes, halved

- 1 bunch broccolini, chopped

- 1 zucchini, sliced

- 100g feta, cubed

- Handful of basil, roughly chopped

- 1/2 cup tasty cheese, grated

To make:

  1. Preheat oven to 180°C. Line a baking dish with baking paper and grease the paper and sides of dish with olive oil.

  2. In a blender combine eggs, milk, salt and pepper. Blend until just combine to avoid a frothy mixture.

  3. Arrange vegetables and feta evenly in the dish. Pour over egg mixture and top with grated cheese.

  4. Bake for 15-20 minutes or until the egg mixture is completely cooked.

  5. Serve warm, or store in the fridge for easy lunches throughout the week.

This is a great way to use up any left-over vegetables in your fridge, and leftovers make for easy and healthy breakfast or lunch on the go!
